Giordis Semolina Pasta Dough
Ingredients:
- 300 grams semolina fine
- 130 grams warm water
- Pinch of salt
Instructions:
- Let’s start by mixing the semolina and salt in a bowl. You can really smell the nutty aroma of the semolina when you do this.
- Gradually add the warm water to the bowl while mixing with a fork. You’ll start to see the flour absorb the water and form a shaggy dough.
- This is where the magic happens – kneading the dough. Place the dough onto a clean work surface and knead it vigorously for 10 minutes. You’ll feel the dough transform from rough and lumpy to smooth and elastic.
- Once the dough is smooth, form it into a ball and cover with a bowl. Give yourself a pat on the back – you’ve just made pasta dough from scratch!
- Let the dough rest at room temperature for 30-60 minutes. During this time, the gluten in the dough will relax and the flour will hydrate.
- Now it’s time to get creative! Cut the dough into your desired shape and cook in a pot of salted boiling water for 2-3 minutes. Serve with your favorite sauce and enjoy the delicious flavor and texture of homemade pasta!
