Ingredients:
- 200 grams semolina fine
- 100 grams 00 flour
- 130 grams warm water
- Pinch of salt
Instructions:
- In a bowl, mix together the semolina, 00 flour, and salt. You can see the contrast in color and texture between the two flours.
- Gradually add the warm water while mixing with a fork. Keep mixing until a shaggy dough forms.
- Knead the dough vigorously for 10 minutes. This dough may feel a bit firmer than the semolina-only dough, but that’s what makes it perfect for certain shapes.
- Form the dough into a ball and cover with a bowl. Now comes the hard part – waiting for 30-60 minutes for the dough to rest. Try to resist the urge to peek under the bowl!
- Once the dough has rested, cut it into your desired shape. This dough is perfect for shapes like fettuccine or tagliatelle, as it holds its shape well.
- Cook the pasta in a pot of salted boiling water for 2-3 minutes, until al dente. Serve with your favorite sauce and enjoy the perfect blend of semolina and 00 flour in every bite!
